WHOLE WHEAT PASTA WITH FAVA PUREE

Now that winter is sneaking up on us, I think back to my childhood and am reminded of a dish that was once considered a meal for paupers. “Peasant food” and it is sometimes referred. These old world dishes are filling and very nutrient dense, in a restaurant this dish will be pricey but to make at home you’ll be pleased to know this dish is about five dollars to make enough to feed a small army. Warm and extremely satisfying this dish packs a whopping 47 grams of protein and 37 grams of fiber per 2 cup serving, along with iron, and other very much needed minerals….talk about sticking to the ribs heres what you’ll need

1LB Whole Wheat Pasta (organic )

2 cups of fava bean puree (see recipe)

2 medium sized red onions sliced

High quality extra virgin olive oil

Salt and freshly ground pepper

Sautee red onion in extra virgin olive oil until very soft, add fava puree and mix together. Cook whole wheat pasta until al dente and add to the mixture……drizzle with extra virgin olive oil salt and pepper and serve………..

FAVA BEAN PUREE

1lb split fava beans

1 container of organic chicken broth or salted water

Add fava to a saucepan and cover with liquid. Simmer on med high heat stirring often until beans have the consistency of mashed potatoes….
