Healthy Recipes – Sauteed Swiss Chard

When the nippy weather starts creeping up, childhood memories brings me back to the green leafy vegetable called swiss chard.  Swiss Chard is a vegetable that is very popular in Mediterranean cuisine.  Swiss Chard is high in minerals, as well as is a rich source in Vitamin A, K and C.  Part of the beet family Swiss Chard is an excellent leafy green to add to your diet.  This green contains SYRINGIC ACID which inhibits the enzyme known as Alpha Glucosidase.  When this enzyme is inhibited, your body breaks down carbs at a slower pace and in turn regulates blood sugar levels.   Pick leaves that are robust and deep in color, with stalks that are white or red depending on the variety you choose………its very simple to make and once simmering will fill your home with an earthy aroma reminiscent of home in the fall.

1 medium sided white onion diced

2 tbsp Extra Virgin Olive Oil

5 cloves garlic roughly chopped

1 container POM chopped tomatoes

3 large bushels Swiss chard trimmed into bite sized pieces and washed

In a dutch oven, saute the onion and garlic in the olive oil until translucent, add washed swiss chard in the oil allow to wilt.  Add chopped tomatoes and simmer on med heat for about 1/2 hour or until stalks are fork tender……

You may also add 1/2  tsp red pepper flakes (optional)

This side dish is perfect with grilled chicken because the water the chard releases with the tomatoes are excellent to serve over the chicken.
