There’s nothing like a simmering pot of chili working on the stove in the cold winter weather. Unfortunately some chilis have added flours and beer, which will sabotage your diet in a major way but that doesn’t mean you can’t make your own. Here’s the recipe
2lbs ground white meat turkey, chicken or bison….(Organic)
5 cloves garlic sliced
1 large white onion diced
1 med sized red onion diced ( red pigment high antioxidants )
1 green bell pepper
1 red bell pepper
1 serrano, habenero or jalepeno ( seeds removed unless u like it hot)
1 container organic chicken broth (u will use half)
1 jar of Organic Tomatoes (only tomatoes)
1tbsp extra virgin olive oil or grapeseed oil
chili powder ( a cup)
garlic powder 2 tbsp
cumin powder tsp
black pepper
sea salt
(optional 1-2 cups black beans depending on your fitness goals) if you are offseason these beans add protein, fiber and a ridiculous amount of antioxidants not to mention FLAVOR)
In a cast iron skillet or dutch oven, sautee on med heat garlic onions peppers until translucent ( add a small pinch of red pepper flakes here), add the turkey allow to brown lightly break it up with a wooden spatula so it does not clump up. ( about ten minutes) Add about a cup of the chicken broth and allow to simmer scraping the bottom of the pan to to incorporate the flavors. Add the Jar of tomatoes and all the spices stir together and simmer covered for 20-30 minutes adding more broth if needed to loosen……
Allow to rest 15 minutes before serving……this dish can be served over brown rice or quinoa…….if you are doing low carb then add it over huge bed of raw spinach I love it either way…………….HAPPY FITNESS FRIDAY
