Many pancake and waffle mixes calculate their protein totals in a process called "by input", where the total protein from each ingredient is added together and totaled for the Nutrition Facts.
On the surface this probably sounds fine to the average consumer. The problem with it is, the actual bioavailablity of the protein content in humans is not displayed on the label.
One way you can see if a company is knowingly falsely labeling their protein, is if they leave the Protein Daily Value % column blank on their label.
Using the improper way to calculate protein, our mix would have 19g of protein. But we are honest, and use what's called the Protein Digestibility Corrected Amino Acid Score (PDCAAS) on our label, which comes in at 15g per serving.
The reason other brands don't use this method, is most of the ingredients they use for the bulk of their protein content have a PDCAAS of around 20%, meaning instead of the 14g of protein they put on their Nutrition Facts today, it should actually read 3g.
